A natural history
The papaya is a tropical fruit of Mesoamerica, grown in southern Mexico and Central America long before European ships arrived to carry it around the world. Sweet, fragrant, and faintly golden, it so charmed early explorers that it is often said Christopher Columbus called it the fruit of the angels. From the Caribbean it spread across every tropical coast.
Long before laboratories, people knew the green fruit had a quiet power. Mesoamerican cooks wrapped tough meat in papaya leaves to tenderize it, and the milky latex was dabbed on rough skin, warts, and corns. The active behind both tricks is the same: papain, a natural enzyme that breaks down protein, the very property that makes papaya a gentle exfoliant today.

Papaya owes its smoothing reputation to papain, an enzyme that loosens the proteins binding dull, dead cells to the skin's surface.
